White Bean Soup

Notes — This is technically a doubled recipe, so you can halve it really easily. (1878 kcal/recipe)

Ingredients

  • 4 cups spinach or kale, coarsely chopped
  • 2 full onions, finely chopped
  • 6 ribs celery, finely chopped
  • 8 cloves garlic, minced
  • 1 cup parsley, chopped
  • 1 cup fresh basil, chopped
  • 2 tsp oregano
  • 4 15. oz cans diced tomatoes
  • 3 15oz cans white beans
  • 8+ cups of water
  • pinch salt and pepper
  • pinch of red pepper flakes

Instructions

  1. Saute onion and celery in water until cooked and soft.
  2. Add garlic, saute for one min.
  3. Add all remaining ingredients into pot.
  4. Simmer 30 min and serve.
