Notes — This is technically a doubled recipe, so you can halve it really easily. (1878 kcal/recipe)
Ingredients
- 4 cups spinach or kale, coarsely chopped
- 2 full onions, finely chopped
- 6 ribs celery, finely chopped
- 8 cloves garlic, minced
- 1 cup parsley, chopped
- 1 cup fresh basil, chopped
- 2 tsp oregano
- 4 15. oz cans diced tomatoes
- 3 15oz cans white beans
- 8+ cups of water
- pinch salt and pepper
- pinch of red pepper flakes
Instructions
- Saute onion and celery in water until cooked and soft.
- Add garlic, saute for one min.
- Add all remaining ingredients into pot.
- Simmer 30 min and serve.
