Vegetable Broth

Ingredients

2 white onions, quartered

1 bulb garlic, halved

3 carrots, quartered

4 ribs celery, quartered

2 bay leaves

6-8 sprigs thyme

30 peppercorns

Instructions

  1. Toss all ingredients in a large pot
  2. Cover with water and bring to a boil then lower to a simmer for one hour.
  3. Strain the broth.
