Notes — Can be stuffed into a turkey, or cooked in a metal pan covered in foil. Use different types of bread for the cubes and don’t add more than the 1 cup of chicken stock or else it will boil over or be soggy. (unknown kcal/burrito)
Ingredients
- 16 cups of 1 inch bread crumbs (about 2 full loaves)
- 4 tbsp unsalted butter
- 2 cups yellow onion, diced
- 2 cups celery, diced
- 2 granny smith apples, unpeeled and diced
- 2 tbsp flat leaf parsley
- 1 1/2 tsp minced fresh rosemary leaves
- 2 tsp salt
- 1 tsp ground black pepper
- 1 cup chicken stock
Instructions
- Preheat oven to 300˚F
- Cut bread into cubes, put cubes on a metal baking sheet(s) and bake them in the oven for 7 min. (The more dry, the better).
- In a large sauce pan, melt butter and add the onion, apples, parsley, rosemary, salt and pepper. Saute for 10 min, until all ingredients are soft.
- Combine bread cubes and cooked vegetables. Mix them in a large bowl.
- Pour chicken stock into the mixing bowl, mix thoroughly.
- Stuff in turkey and cook. (Or cook at 350˚F until the top is crispy)
