Succotash

Notes — Good hot or cold. (1620 kcal/recipe with bacon, 1020 without)

Ingredients

  • 1/4 lb bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 ears corn, kernels cut off
  • 1 large fresh jalapeño, diced
  • 10oz pkg frozen baby lima beans
  • 1/2 lb okra chopped (canned okay)
  • 3/4 lbs tomatoes, chopped
  • 2 tbsp apple cider vinegar
  • 1/4 c chopped basil
  • salt + pepper

Instructions

  1. Cook bacon, reserve fat
  2. Use 1-2 tbsp of the reserved bacon oil to saute the onion until browned.
  3. Add garlic and cook for 1 minute.
  4. Stir in all other vegetables and let cook on medium heat until warmed through, about 7 minutes.
  5. Add vinegar, basil, salt pepper and bacon bits. Stir and serve.
