Notes — Good hot or cold. (1620 kcal/recipe with bacon, 1020 without)
Ingredients
- 1/4 lb bacon, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 ears corn, kernels cut off
- 1 large fresh jalapeño, diced
- 10oz pkg frozen baby lima beans
- 1/2 lb okra chopped (canned okay)
- 3/4 lbs tomatoes, chopped
- 2 tbsp apple cider vinegar
- 1/4 c chopped basil
- salt + pepper
Instructions
- Cook bacon, reserve fat
- Use 1-2 tbsp of the reserved bacon oil to saute the onion until browned.
- Add garlic and cook for 1 minute.
- Stir in all other vegetables and let cook on medium heat until warmed through, about 7 minutes.
- Add vinegar, basil, salt pepper and bacon bits. Stir and serve.
