Spiced Shredded Chicken

Notes — An easy recipe to start and forget. Leftover bones are awesome for chicken broth. The chicken will fall apart once taken out of the pot. Great for adding to salads or just having frozen for soup later on. (unknown kcal/recipe)

Ingredients

  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tbsp onion powder
  • 1 tbsp thyme
  • 1/2 tbsp garlic powder
  • 1/4 tbsp cayenne
  • 1/4 tbsp pepper
  • 1 onion
  • 1 med-large chicken (fully defrosted)

Instructions

  1. Combine and grind all of the small spices.
  2. Chop the onion and place it in the bottom of the slow cooker.
  3. Clean the chicken and remove giblets.
  4. Rub the spice mixture all over the outside and inside of the chicken
  5. Place in pot and cook for 4-5 hours on high until the chicken is falling off the bone.
  6. Once cooked, remove the skin and shred the chicken.
