Ingredients
- 1 red bell pepper, diced
- 8 oz cremini mushrooms, minced
- 2 cloves garlic, minced
- 14 oz. (1 pkg) firm tofu, cubed then slightly mashed and crumbled
- 1 1/2 sp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/4 tsp turmeric
- 1 bunch kale
- 1/2 cup nutritional yeast
- salt, pepper and top with sriracha to taste
Instructions
- Heat a large pan or wok over medium-high heat.
- When hot, add pepper and mushrooms. Cook until soft.
- Add garlic and cook for another minute.
- Add the paprika, cumin, salt and turmeric.
- Cook until flavors combine and tofu is heated throughout.
- Reduce the heat to medium, add kale.
- Cover and steam for 4-7 minutes, checking every minute for doneness.
- Finally, stir in the nutritional yeast. Season, salt, and siracha to taste and serve.
