Scrambled Tofu

Ingredients

  • 1 red bell pepper, diced
  • 8 oz cremini mushrooms, minced
  • 2 cloves garlic, minced
  • 14 oz. (1 pkg) firm tofu, cubed then slightly mashed and crumbled
  • 1 1/2 sp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/4 tsp turmeric
  • 1 bunch kale
  • 1/2 cup nutritional yeast
  • salt, pepper and top with sriracha to taste

Instructions

  1. Heat a large pan or wok over medium-high heat.
  2. When hot, add pepper and mushrooms. Cook until soft.
  3. Add garlic and cook for another minute.
  4. Add the paprika, cumin, salt and turmeric.
  5. Cook until flavors combine and tofu is heated throughout.
  6. Reduce the heat to medium, add kale.
  7. Cover and steam for 4-7 minutes, checking every minute for doneness.
  8. Finally, stir in the nutritional yeast. Season, salt, and siracha to taste and serve.
