No Knead Bread

Notes — Be very exact on these measurements. (1850 kcal/recipe)

Ingredients

  • 4 cups bread flour
  • 1/3 tsp active dry yeast
  • 1 2/3 tsp salt
  • 2 1/6 cups lukewarm water
  • extra flour for rolling and storing dough.
  • cooking spray

Instructions

  1. Stir together all dry ingredients in a large bowl.
  2. Add water, mix all ingredients together until doughy.
  3. Roll into a loose ball.
  4. Divide in half, add halves individual oiled bowls. Toss each half in bowl to coat with oil.
  5. Let sit, covered with damp paper towels or cloth for 18 hours. Do not let the damp cloth touch the dough. Make sure that the cloth stays damp throughout the whole 18 hours.
  6. Scrape raised dough out of bowls, roll into a ball and let sit on a floured surface for 2 more hours
  7. Preheat oven to 450-500ºF about 30 min before dough is ready. If using a pizza stone, place it in now. Place a deep pan full of water in the bottom of the oven as close to heater element as possible. This will steam and help create a more crispy crust. More steam means crisper outside and softer inside.
  8. Bake for 25 min for 1/2 loaf or 45 min for full loaf.
