Chicken Tsukune

Notes — The mentsuyu recipe is in the basics category. In this recipe you concentrate the mix 3x. Make sure to squeeze out as much moisture from the tofu. If you use extra-hard tofu you wont need to squeeze as much. Serve these with tamogoyaki in a bento box or just eat them straight. (unknown kcal/recipe)

Ingredients (Meatballs)

  • 1/2 lb ground chicken
  • 1 egg, beaten
  • 1/4 lb tofu
  • 3 tbsp leek, minced
  • 1/2 tsp mentsuyu (3x concentrated)
  • 1 tsp sake
  • 1/4 tsp sugar
  • 1 pinch salt

Ingredients (Sauce)

  • 2 tsp soy sauce
  • 2 tsp mentsuyu (3x concentrated)
  • 4 tsp sugar
  • 1 tsp mirin
  • 1/2 tsp bonito flakes

Instructions

  1. Stir together all the ingredients for the sauce and set asside.
  2. Knead together all the ingredients for the chicken patties.
  3. Roll the mixture into balls.
  4. Pan fry the balls until browned and cooked through. (You can probably also bake them in the oven at 350˚F for 30 min, but that’s untested.)
  5. Toss the cooked meatballs with the sauce and serve.
