Notes — An easy to put together soup that focuses mostly on the garnishes. You can basically cut as many corners as possibly on this recipe and get everything pre-made from most stores. All of the garnishes are optional. You can also prep all of the different ingredients separately and combine right before serving. (unknown kcal/recipe)
Ingredients
- 2 chicken breasts, cubed
- 1-2 tbsp pork lard
- 1 tbsp fajita seasoning mix
- 1 cup sweet onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2-3 cups pico de gallo
- 6-8 cups of chicken broth
- salt to taste
Garnishes
- corn or flour tortillas, chopped to half inch by two inch strips
- sour cream or crema
- diced avocado
- diced red onion
- sliced radish
- pico de gallo
- cojita or monterey jack cheese
- cilantro, diced
- lime, cut to eighths
Instructions
- Fry the chicken in pork lard in a large stock pot. Remove from the pan.
- Sauté the onions, bell peppers until they’re soft.
- Add garlic and spices then cook for 1 minute.
- Add the tomatoes, broth, and pico. Bring to a boil then let simmer for about 5 min.
- Add salt to taste. Let it sit for 5-10 min to cool and combine flavors.
- Garnish with your favorite toppings and serve.
