Chicken Tortilla Soup

Notes — An easy to put together soup that focuses mostly on the garnishes. You can basically cut as many corners as possibly on this recipe and get everything pre-made from most stores. All of the garnishes are optional. You can also prep all of the different ingredients separately and combine right before serving. (unknown kcal/recipe)

Ingredients

  • 2 chicken breasts, cubed
  • 1-2 tbsp pork lard
  • 1 tbsp fajita seasoning mix
  • 1 cup sweet onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2-3 cups pico de gallo
  • 6-8 cups of chicken broth
  • salt to taste

Garnishes

  • corn or flour tortillas, chopped to half inch by two inch strips
  • sour cream or crema
  • diced avocado
  • diced red onion
  • sliced radish
  • pico de gallo
  • cojita or monterey jack cheese
  • cilantro, diced
  • lime, cut to eighths

Instructions

  1. Fry the chicken in pork lard in a large stock pot. Remove from the pan.
  2. Sauté the onions, bell peppers until they’re soft.
  3. Add garlic and spices then cook for 1 minute.
  4. Add the tomatoes, broth, and pico. Bring to a boil then let simmer for about 5 min.
  5. Add salt to taste. Let it sit for 5-10 min to cool and combine flavors.
  6. Garnish with your favorite toppings and serve.
