Ingredients
- 2 lbs chicken thighs, deboned and skinless
- 1 cup quinoa
- 2-4 cups kale, chopped
- 3 ribs celery, chopped
- 3 carrots, chopped
- 2 poblano peppers or 1 bell pepper, chopped
- 1 onion, chopped finely
- 6 garlic cloves, minced
- 8 cups chicken broth
- 1/2 tsp cumin
- 1/2 tsp dried thyme
- salt to taste
Instructions
- Throw it all in a slow cooker for 8 hours on low or 4 hours on high.
