Chicken Quinoa Soup

Notes — A quick and easy one pot soup. (unknown kcal/recipe)

Ingredients

  • 2 lbs chicken thighs, deboned and skinless
  • 1 cup quinoa
  • 2-4 cups kale, chopped
  • 3 ribs celery, chopped
  • 3 carrots, chopped
  • 2 poblano peppers or 1 bell pepper, chopped
  • 1 onion, chopped finely
  • 6 garlic cloves, minced
  • 8 cups chicken broth
  • 1/2 tsp cumin
  • 1/2 tsp dried thyme
  • salt to taste

Instructions

  1. Throw it all in a slow cooker for 8 hours on low or 4 hours on high.
